  • In a mixing bowl, blend 1¼ cups of all-purpose flour, ½ teaspoon of salt, and 1 tablespoon of sugar. Add ½ cup of cold cubed butter and cut it into the mixture using a pastry cutter or fork until it resembles coarse crumbs. Gradually drizzle in 1 tablespoon of ice water, mixing gently until the dough holds together. Shape it into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  • Once chilled, dust your work surface with flour and roll out the dough into a 12-inch circle. Carefully transfer the rolled dough to a 9-inch pie pan, gently fitting it into the edges. Trim the excess dough hanging over the edges, creating a clean finish.
  • In a large bowl, whisk together 1 cup of corn syrup and 1 cup of brown sugar until smooth. Crack in 3 large eggs (or use flax eggs) and add 1 tablespoon of vanilla extract. Whisk until fully combined before stirring in ½ cup of melted butter and folding in 1 cup of chopped pecans.
