Instructions
Step-by-Step Instructions
In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add the sliced kielbasa.
Cook for about 5-7 minutes, stirring until nicely browned. Remove and set aside.
In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened.
Stir in minced garlic and cook for an additional minute.
Add diced potatoes, broth, thyme, paprika, salt, and pepper. Bring to a boil.
Reduce heat to low and simmer for about 20 minutes until potatoes are tender.
Stir in heavy cream and add back kielbasa. Heat through for about 5 minutes.
Taste and adjust seasoning as necessary.
Garnish with chopped parsley and serve.
Notes
Aim for evenly diced potatoes for uniform cooking. Sauté kielbasa for better broth flavor. Add cream at the end of cooking to keep it smooth.
