Steps

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine olive oil, lemon zest, and lemon juice. Add the salt, pepper, thyme, rosemary, and oregano. Mix until it forms a paste.
  • Pat the whole chicken dry. Rub the herb mixture all over the chicken, ensuring to get under the skin.
  • Place the seasoned chicken in a roasting pan and surround it with mixed vegetables.
  • Pour chicken broth into the roasting pan around the chicken and vegetables.
  • Insert the roasting pan into the oven and roast for about 1 hour and 30 minutes, checking that the internal temperature reaches 165°F (74°C).
  • For a crispy skin, optionally broil the chicken on high for a few minutes after roasting.
  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Notes

Ensure to dry the chicken well for crispy skin, and rub the herb mixture under the skin for maximum flavor penetration.
