For the Noodles & Greens

  • 8 ounces lasagna noodles broken into pieces
  • 3 cups fresh spinach wilts beautifully

For the Cheese Topping

  • ¾ cup ricotta cheese for creamy finish

Instructions

Step-by-Step Instructions

  • In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 4 to 5 minutes, until softened and translucent.
  • Stir in minced garlic and tomato paste. Cook for an additional minute, until garlic is fragrant.
  • Pour in crushed tomatoes and vegetable broth, then add rinsed lentils, Italian seasoning, red pepper flakes, salt, and black pepper. Stir to combine.
  • Bring to a gentle boil, then reduce heat to low and cover. Let simmer for 20 to 25 minutes until lentils are nearly tender.
  • Stir in broken lasagna noodles and cook uncovered for 10 to 12 minutes.
  • Add fresh spinach and cook for 2 minutes until wilted.
  • Ladle soup into bowls and top with ricotta, mozzarella, and Parmesan cheese.
  • Sprinkle with fresh herbs before serving.

Notes
