  • Preheat your oven to 350°F (175°C).
  • Scrub the potatoes under cold water and slice them into ⅛-inch rounds.
  • In a medium saucepan, melt the butter. Add diced onion and minced garlic, sauté for 1-2 minutes until soft.
  • Stir in the flour and cook for another minute. Gradually add milk and broth, stirring until it thickens.
  • Stir in thyme and salt, then mix in the cheeses until well combined.
  • Lightly grease a casserole dish. Layer potatoes and cheese sauce, finishing with sauce on top.
  • Cover the dish with aluminum foil and bake for 30 minutes. Remove foil, bake for another 35-45 minutes until golden.
  • Let cool for about 10 minutes before serving.
