Instructions
Preparation Steps
Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
In a clean, dry mixing bowl, add the egg whites and beat them on medium speed until foamy.
Sprinkle in the cream of tartar and salt, then continue beating until soft peaks form.
Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed until glossy, stiff peaks form.
Gently fold in the vanilla extract and peppermint extract using a spatula.
Transfer the meringue mixture into a piping bag fitted with a large star tip and pipe small mounds onto the prepared baking sheet.
Bake for 90 minutes until dry to the touch, then turn off the oven and leave the meringues inside for 1-2 hours to cool.
Once cooled, sprinkle crushed peppermint candies generously on top of each meringue.
