Instructions

Preparation Steps

  • Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  • In a clean, dry mixing bowl, add the egg whites and beat them on medium speed until foamy.
  • Sprinkle in the cream of tartar and salt, then continue beating until soft peaks form.
  • Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed until glossy, stiff peaks form.
  • Gently fold in the vanilla extract and peppermint extract using a spatula.
  • Transfer the meringue mixture into a piping bag fitted with a large star tip and pipe small mounds onto the prepared baking sheet.
  • Bake for 90 minutes until dry to the touch, then turn off the oven and leave the meringues inside for 1-2 hours to cool.
  • Once cooled, sprinkle crushed peppermint candies generously on top of each meringue.
