Instructions
Step-by-Step Instructions
Start by placing 8 ounces of softened cream cheese in a mixing bowl. Using a hand mixer or a fork, beat the cream cheese until it is smooth and creamy, which should take about 2 minutes.
Add 1 cup of shredded sharp cheddar cheese, ½ cup of crumbled blue cheese, and ¼ cup of finely chopped green onions to the bowl. Stir vigorously until well combined.
Sprinkle in ¼ cup of crumbled bacon, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, ½ teaspoon of paprika, and ½ teaspoon of black pepper. Mix thoroughly for another minute.
Using your hands, scoop out approximately 1 tablespoon of the cheeseball mixture at a time and roll each portion into smooth balls.
Pour ½ cup of chopped nuts into a shallow dish. Roll each cheeseball bite in the nuts, ensuring they’re coated evenly.
Arrange the bites on a serving platter and cover with plastic wrap. Refrigerate for at least 30 minutes.
After chilling, serve the cheeseball bites on a platter alongside pretzel crisps or crackers.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4-5 days. For best texture, let bites rest at room temperature for 10 minutes before serving.
