Step‑by‑Step Instructions

  • In a large pot, heat 3 tablespoons of oil over medium heat until it shimmers. Add 2 sliced onions and sauté for about 8-10 minutes until they turn golden brown and fragrant.
  • Stir in 1 tablespoon of ginger-garlic paste into the onions, sautéing for an additional 2 minutes until the raw scent disappears.
  • Add 2 chopped tomatoes to the pot, cooking for about 5-7 minutes until they soften significantly.
  • Incorporate 2 teaspoons of chili powder, 1 teaspoon of turmeric powder, 1 teaspoon of garam masala, 1 tablespoon of coriander powder, 1 teaspoon of cumin powder, and salt to taste, along with 2 slit green chilies.
  • Introduce 1 kg of bone-in mutton pieces into the pot, stirring well to coat the meat evenly.
  • Pour in ½ cup of yogurt and mix thoroughly, ensuring the yogurt is evenly integrated with the mutton and spices.
