Ingredients

For the Filling

  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 1 cup sliced bell peppers
  • 1 cup sliced onions
  • 1 cup sliced mushrooms

For the Quesadillas

  • 4 large tortillas
  • 2 cups shredded provolone cheese
  • 2 tablespoons olive oil for sautéing
  • ¼ teaspoon black pepper to taste
  • salt salt to taste

Step-by-Step Instructions

  • In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers. Sauté for 5-7 minutes until softened and caramelized.
  • Push vegetables to the side, add beef, season with salt and black pepper. Cook for 4-6 minutes until browned. Mix everything and set aside.
  • Reduce heat to low, place a tortilla in the skillet. Sprinkle half of the provolone cheese on one half of the tortilla.
  • Spread the beef and vegetable mixture over the cheese, then sprinkle remaining cheese on top.
  • Fold the tortilla over the filling, pressing down to seal it.
  • Cook the folded quesadilla on low heat for 3-4 minutes until golden brown.
  • Flip the quesadilla and cook the other side for another 3-4 minutes until golden.
  • Remove from skillet, let cool slightly, then slice into wedges and serve.

Notes

Serve with a salad or dip for a complete meal. Store leftovers in an airtight container for up to 3 days.
