Step-by-Step Instructions
In a large bowl, combine the dough ingredients and mix until a soft, sticky dough forms.
Transfer the dough onto a floured surface and knead for at least 10 minutes until smooth and elastic.
Cover the kneaded dough with a cloth and let it rest for about 30 minutes.
Gently punch down the dough and divide it into equal portions.
Coat each portion with vegetable oil and roll into smooth balls.
Let the dough balls rest for another 10 minutes.
Flatten each dough ball into a thin, translucent square shape.
Brush with melted butter and sprinkle semolina before folding the sides towards the center.
Continue this process with remaining dough balls, stacking them separately.
Preheat a non-stick frying pan over medium heat and lightly oil the surface.
Cook each folded Msemen for 3–4 minutes per side until golden brown.
