Instructions

Step-by-Step Instructions for Crispy Roast Potatoes

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes, then cut them into even-sized chunks, 1 to 2 inches thick.
  • Place the potato chunks in a large pot filled with salted water and bring to a boil. Simmer for about 10 minutes.
  • Drain the potatoes in a colander and let them sit for a few minutes to allow steam to escape.
  • Drizzle olive oil onto a large baking sheet and place it in the oven for about 5 minutes to heat the oil.
  • Return the potatoes to the pot and add sea salt, black pepper, garlic powder, rosemary, and thyme. Cover and shake to coat evenly.
  • Remove the hot baking sheet from the oven and add the seasoned potatoes. Roast for 25-30 minutes, flipping halfway through.
  • Check the potatoes after 45-50 minutes to see if they’re golden brown and crispy. Adjust cooking time if needed.
  • Remove from oven, let cool for a couple of minutes, and serve.

These potatoes can be prepped in advance and frozen, making them an efficient side dish for any occasion.
