Instructions
Step-by-Step Instructions for Crispy Roast Potatoes
Preheat your oven to 425°F (220°C).
Wash and peel the potatoes, then cut them into even-sized chunks, 1 to 2 inches thick.
Place the potato chunks in a large pot filled with salted water and bring to a boil. Simmer for about 10 minutes.
Drain the potatoes in a colander and let them sit for a few minutes to allow steam to escape.
Drizzle olive oil onto a large baking sheet and place it in the oven for about 5 minutes to heat the oil.
Return the potatoes to the pot and add sea salt, black pepper, garlic powder, rosemary, and thyme. Cover and shake to coat evenly.
Remove the hot baking sheet from the oven and add the seasoned potatoes. Roast for 25-30 minutes, flipping halfway through.
Check the potatoes after 45-50 minutes to see if they’re golden brown and crispy. Adjust cooking time if needed.
Remove from oven, let cool for a couple of minutes, and serve.
