Instructions
Preparation Steps
Wash the romaine lettuce under cold water, chop into bite-sized pieces, and place in a salad bowl.
Wash the cherry tomatoes, slice in half, and add to the bowl.
Peel and dice the cucumber and chop the bell pepper. Add both to the salad bowl along with shredded carrots.
Thinly slice the radishes and red onion, add to the bowl and toss gently.
Dice the avocado and fold it into the salad carefully.
Sprinkle sunflower seeds and feta cheese over the top.
Combine olive oil, apple cider vinegar, Dijon mustard, honey/maple syrup, garlic powder, salt, and pepper in a separate bowl. Whisk until emulsified.
Drizzle dressing over the salad just before serving and toss gently.
Garnish with fresh parsley before serving.
Notes
Use fresh vegetables for the best flavor, and add sunflower seeds just before serving to keep them crunchy.
