Ingredients

For the Cheesy Finish

  • ½ cup Parmesan cheese grated
  • ½ cup Mozzarella cheese shredded

  • 2 cups Fresh spinach chopped
  • 1 medium Carrot diced
  • 1 stalk Celery diced

Instructions

Preparation Steps

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add ground chicken, sauté for 5-7 minutes until fully browned.
  • Remove chicken, add onion, and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and sauté for 1-2 minutes until fragrant.
  • Recombine chicken into pot, mixing with onion and garlic.
  • Pour in chicken broth, stir, and bring to a simmer.
  • Add heavy cream and whole milk, stirring until combined.
  • Sprinkle in dried basil, dried oregano, salt, black pepper, and red pepper flakes.
  • Let simmer for 10-15 minutes.
  • Stir in grated Parmesan cheese until melted.
  • Add shredded mozzarella until melted completely.
  • Incorporate spinach, diced carrot, and diced celery, cooking for additional 5-7 minutes.
  • Taste and adjust seasoning before serving.
  • Ladle into bowls and enjoy!
