Ingredients

For the Chicken Marinade

  • 4 pieces Boneless, skinless chicken breasts
  • ¼ cup Honey
  • 2 tablespoons Hot sauce adjust to taste
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

For the Sweet Corn Salad

  • 2 cups Fresh sweet corn kernels
  • 1 cup Cherry tomatoes halved
  • ½ cup Red onion finely chopped
  • ¼ cup Fresh cilantro chopped
  • 1 lime Lime juice for dressing
  • 1 medium Avocado diced

Instructions

Preparation Steps

  • In a small bowl, whisk together the honey, hot sauce, olive oil, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  • Place the chicken in a resealable bag, pour marinade, ensure well-coated, seal bag, and refrigerate for at least 1 hour.
  • Preheat your grill to medium-high heat (around 375°F or 190°C) and brush grill grates with oil.
  • Remove chicken from marinade and place on grill, cooking for 6-8 minutes per side until internal temperature reaches 165°F.
  • In a bowl, combine corn, cherry tomatoes, red onion, and cilantro; stir gently to mix.
  • Squeeze lime juice over the salad and toss; fold in avocado, season with salt and pepper to taste.
  • Remove chicken from grill and let rest for a few minutes, slice, and serve over the sweet corn salad.

Notes

For a milder flavor, adjust the amount of hot sauce in the marinade. Leftovers can be stored in the fridge for up to 3 days.
