  • 1 pound sirloin steak cut into bite-sized pieces
  • 1 tablespoon olive oil for searing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 9 ounces cheese tortellini fresh or frozen

For the Veggies

  • 1 cup cherry tomatoes halved
  • 2 cups baby spinach

For the Broth and Cheese

  • 1 cup beef broth
  • ½ cup grated Parmesan cheese

For the Garnish

Instructions

Step-by-Step Instructions

  • Heat a large skillet over medium-high heat for about 2 minutes. Add 1 tablespoon of olive oil.
  • Season the steak with garlic powder, onion powder, salt, and pepper. Add the steak in a single layer and sear for 2–3 minutes.
  • In the same skillet, add the remaining tablespoon of olive oil and sauté cherry tomatoes for about 2 minutes.
  • Stir in the baby spinach and cook for an additional 1–2 minutes until wilted.
  • Pour in the beef broth and bring to a simmer. Add cheese tortellini and cook according to package instructions (about 3–5 minutes).
  • When tortellini is al dente, return seared steak to the skillet, sprinkle in Parmesan cheese and stir to combine.
  • Taste and adjust seasonings if necessary, then remove from heat.
  • Serve hot, garnished with fresh basil if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Can freeze portions for up to 2 months.
