  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon cinnamon

For the Veggies & Garnish

  • 4 small sweet potatoes, peeled and cubed
  • 1 large apple, cored and sliced
  • ½ cup pecans, chopped
  • to taste fresh parsley for garnish

Instructions

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Season chicken breasts with salt and pepper.
  • In a large ovenproof skillet, heat olive oil over medium-high heat and sear chicken breasts for 5–7 minutes per side.
  • Lower heat, add butter and garlic, and sauté for about 1 minute until fragrant.
  • Pour in apple cider and chicken broth, scraping up brown bits from the skillet.
  • Stir in Dijon mustard, thyme, and cinnamon. Simmer for 2 minutes.
  • Add cubed sweet potatoes and sliced apple, stirring to coat.
  • Nestle the seared chicken back into the skillet.
  • Sprinkle chopped pecans over the dish.
  • Transfer skillet to oven and bake for 25–30 minutes.
  • Remove from oven, let rest for a few minutes, and garnish with parsley before serving.

Notes

For best results, allow chicken to rest before serving to retain juiciness.
