Instructions
Step-by-Step Instructions
Rinse the chicken breasts under cold water, then pat dry with paper towels.
In a large mixing bowl, whisk together olive oil, lime juice, and minced garlic.
Add cumin, smoked paprika, and onion powder, then mix in finely chopped cilantro and chopped jalapeños.
Season the chicken breasts with salt and pepper, then place them in the marinade.
Turn the chicken in the marinade, then cover the bowl and refrigerate for at least 2 hours.
Preheat the grill over medium-high heat for about 10 minutes.
Lightly oil the grill grates using a paper towel dipped in oil.
Place chicken on the grill and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F.
Remove the chicken from the grill and let it rest for a few minutes.
Slice the chicken and serve it garnished with extra chopped cilantro and lime wedges.
Notes
Marinade for at least 2 hours for deeper flavor. Adjust jalapeño spice level to taste. Always allow chicken to rest after grilling to keep it juicy.
