  • Begin by heating a large skillet or wok over medium heat. Add the chopped bacon and cook for about 5-7 minutes, stirring occasionally, until it becomes crispy and golden brown.
  • In the same skillet, push the remaining bacon fat to one side and crack the two large eggs onto the other side. Scramble the eggs for approximately 2-3 minutes until they are fully cooked.
  • Add the finely chopped onion to the skillet, sautéing for about 3-4 minutes until the onions turn translucent.
  • Stir in the frozen peas and carrots mix, cooking for 2-3 minutes until the vegetables are heated.
  • Increase the heat to medium-high and introduce the cold cooked white rice to the skillet, stirring continuously for 2-3 minutes.
  • Pour in the soy sauce and sesame oil, stirring well to coat every grain of rice evenly for about 1-2 minutes.
  • Return the crispy bacon and scrambled eggs to the skillet, thoroughly mixing them into the rice and vegetable mixture for another 1-2 minutes.
  • Taste your Bacon Fried Rice and season with salt and black pepper as needed, cooking for another minute or two.
