  • In the same pot, add onion, carrots, celery, and garlic. Sauté for 5–7 minutes until onion is translucent and carrots are tender.
  • Pour in white wine, scraping the bottom of the pot to lift browned bits. Allow to simmer for 3–4 minutes.
  • Return beef shanks to the pot, nestle among vegetables, add beef broth, thyme, salt, black pepper, and bay leaf. Stir gently.
  • Bring to a gentle simmer, cover, and reduce heat to low. Cook for 2.5 to 3 hours until meat is fork-tender.
