Step-by-Step Instructions for Beef Tagine

  • Begin by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil shimmers, add 1 chopped onion and sauté for about 5 minutes until it becomes translucent and fragrant.
  • Add 1 pound of beef chuck chunks to the pot, ensuring they have enough space to brown. Cook for about 6-8 minutes, turning occasionally until the beef is browned on all sides.
  • Stir in 1 teaspoon each of ground cumin, ground coriander, ground ginger, cinnamon, paprika, and ½ teaspoon of turmeric. Season with salt and black pepper to taste. Cook this fragrant mixture for another 2-3 minutes.
  • Next, introduce 1 cup each of sliced carrots, diced potatoes, chopped dried apricots, and diced tomatoes into the pot. Pour in 1 cup of beef broth and stir to combine all the ingredients thoroughly.
  • Cover the pot with a lid and reduce the heat to low. Let it simmer gently for 1.5 to 2 hours, stirring occasionally.
