Instructions

Step‑by‑Step Instructions

  • Heat 2 tablespoons of vegetable oil in a large pot over medium-high heat until shimmering.
  • Add 2 pounds of beef chuck to the pot, browning the meat on all sides for about 5 to 7 minutes.
  • In the same pot, add chopped onion and minced garlic, sautéing for 3 to 4 minutes until translucent.
  • Stir in 2 chopped tomatoes and allow them to soften for a few minutes.
  • Add ground cumin, chili powder, paprika, dried oregano, and salt and pepper to taste.
  • Pour in 2 cups of beef broth and 1 cup of water, scraping the bottom of the pot.
  • Add 1 bay leaf to the mixture.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover the pot and let simmer for 1.5 to 2 hours, stirring occasionally.
  • If adding bell peppers and carrots, stir them in about 30 minutes before the cooking time is up.
  • Taste the stew and adjust seasoning if necessary before serving.

Notes
