Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, then coat with cooking spray or oil.
In a skillet, cook the ground beef, onion, and garlic over medium heat until beef is browned and onions are translucent for about 5-7 minutes. Season with salt and pepper, then set aside to cool.
Roll out the refrigerated pizza dough on a floured surface to about ¼ inch thick. Cut into 16 equal squares.
Place a scoop of the beef mixture and a piece of cheddar in the center of each square. Fold the corners over and seal tightly.
Boil 4 cups of water. Add baking soda, reduce heat, and drop each dough ball into water for about 30 seconds.
Remove dough balls with a slotted spoon and place on the baking sheet. Brush tops with beaten egg and sprinkle sesame seeds if desired.
Bake for 15-20 minutes until golden brown. Let cool slightly before serving warm with ketchup or mustard.
