  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chicken thighs seasoned with salt and pepper. Sear for 6-8 minutes until golden brown. Remove chicken from skillet.
  • In the same skillet, add 1 tablespoon of minced garlic and sauté for 1 minute until fragrant.
  • Sprinkle ¼ cup of flour over the sautéed garlic and stir to combine. Cook for 1-2 minutes to form a roux.
  • Gradually whisk in 1 cup of chicken broth, stirring to remove lumps. Let it simmer.
  • Stir in 1 cup of heavy cream and 1 teaspoon of garlic powder. Add the seared chicken back into the skillet and simmer for 5-7 minutes.
  • Mix 2 cups of warm mashed potatoes with ½ cup of shredded cheese and 2 tablespoons of butter. Season with salt and pepper.
  • Plate the chicken over cheesy mashed potatoes and drizzle the gravy over them.
