  • Prepare the chipotle sauce by combining all sauce ingredients in a small bowl and stir until smooth.
  • Heat a large skillet on medium-high heat for about 2 minutes until hot.
  • Brush the outer sides of the sourdough bread slices with olive oil.
  • Assemble the sandwich by layering Chao cheese, smoked chicken, avocado, Peppadew peppers, and cilantro between the two slices of bread.
  • Spread chipotle sauce generously on the inside of the second slice of bread before placing it on top.
  • Cook the sandwich for about 3-4 minutes until the bottom is golden brown and cheese starts to melt.
  • Flip the sandwich carefully and cook for an additional 3-4 minutes until both sides are crispy.
  • Remove from the skillet, cool slightly, slice in half, and serve.
