  • Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the low-sodium chicken broth to a boil, then add the rinsed rice, cover, and lower the heat to low. Simmer for 15-20 minutes until the liquid is absorbed and the rice is tender.
  • Remove the rice from heat and fluff with a fork. Stir in grated Parmesan cheese, garlic powder, and olive oil. Keep warm while preparing the chicken.
  • Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through.
  • Remove chicken from the skillet. Add minced garlic and red pepper flakes (if using) to the skillet and sauté for 1 minute until fragrant.
  • Pour in white wine to deglaze the skillet, scraping up any browned bits. Simmer for 1-2 minutes to reduce slightly.
  • Add lemon juice and chicken broth to the skillet, simmering for 3-4 minutes to blend flavors.
  • Return the cooked chicken to the skillet and stir in unsalted butter. Heat through for 1-2 minutes.
  • Serve by spooning garlic Parmesan rice onto plates, topping with chicken scampi, and finishing with chopped parsley.
