Spanish Rice Ingredients

  • 1 cup Long-grain white rice cooks up fluffy
  • 2 cups Water (for rice)

Instructions

Chili Verde Instructions

  • In a large pot, heat 1 tablespoon of oil over medium heat. Add 2 pounds of pork and brown for 5–7 minutes.
  • Add 4 cups of chopped tomatillos, 1 teaspoon of salt, 1 teaspoon of cumin, 1 teaspoon of garlic powder, and ½ teaspoon of black pepper. Stir in 1 cup of water and bring to a gentle simmer.
  • Cover and let simmer on low heat for about 1 hour, stirring occasionally.

Spanish Rice Instructions

  • While the Chili Verde simmers, in a separate pot, combine 1 cup of rice with 2 cups of water, 1 teaspoon of tomato paste, and 1 teaspoon of chili powder. Bring to a boil.
  • Once boiling, reduce heat, cover, and cook for about 20 minutes.

Finishing Touches

  • Check the Chili Verde after an hour for thickness. Adjust as needed.
  • Serve the piping hot Chili Verde over Spanish rice with sides like guacamole or tortilla chips.
