  • Place the chicken thighs in the bottom of the slow cooker.
  • Whisk together the brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, garlic, and red pepper flakes in a bowl to create the sauce.
  • Pour the sauce over the chicken, ensuring all pieces are coated.
  • Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  • Remove the chicken and shred it using two forks.
  • Mix cornstarch and water to form a slurry, then add it to the sauce in the slow cooker.
  • Stir until combined and return shredded chicken to the pot.
  • Cook uncovered for an additional 5-10 minutes, stirring occasionally, until the sauce thickens.
  • Garnish with chopped green onions and serve over rice.

Notes

Use boneless, skinless thighs for the best results. Adjust the sweetness and spice of the sauce to your preference.
