Ingredients

Noodles

  • 8 oz Fresh noodles Spaghetti works as a substitute.

Sauce

  • 1 tablespoon Vegetable oil For sautéing.
  • 0.5 lb Ground pork Substitute with ground chicken if desired.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Ginger Minced.
  • 2 tablespoon Soy sauce For umami flavor.
  • 2 tablespoon Sesame paste Peanut butter can be used.
  • 1 tablespoon Chili oil Adjust to taste.
  • 1 tablespoon Rice vinegar For balance.
  • 1 tablespoon Sichuan peppercorns Optional.

Garnishes

  • 2 stalks Green onions Chopped.
  • Fresh vegetables Bok choy or sliced cucumbers.
  • 0.25 cup Chopped peanuts For garnish.

Instructions

Cooking Steps

  • Bring a large pot of water to boil. Add fresh noodles and cook according to package instructions, about 3-5 minutes. Drain and set aside.
  • Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add ground pork and cook for 5-7 minutes until browned.
  • Stir in minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
  • Lower heat and add soy sauce, sesame paste (or peanut butter), chili oil, and rice vinegar. Stir until smooth.
  • Add cooked noodles to the pan and toss for 1-2 minutes until coated with sauce.
  • Add Sichuan peppercorns and stir for 30 seconds to incorporate flavor.
  • Plate the noodles and top with green onions, fresh vegetables, and chopped peanuts.

Notes

Adjust chili oil to your taste. Cook noodles only until al dente.
