Instructions
Cooking Steps
Bring a large pot of water to boil. Add fresh noodles and cook according to package instructions, about 3-5 minutes. Drain and set aside.
Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add ground pork and cook for 5-7 minutes until browned.
Stir in minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
Lower heat and add soy sauce, sesame paste (or peanut butter), chili oil, and rice vinegar. Stir until smooth.
Add cooked noodles to the pan and toss for 1-2 minutes until coated with sauce.
Add Sichuan peppercorns and stir for 30 seconds to incorporate flavor.
Plate the noodles and top with green onions, fresh vegetables, and chopped peanuts.
Notes
Adjust chili oil to your taste. Cook noodles only until al dente.
