In a large skillet, heat a drizzle of oil over medium heat. Add ground beef and cook until browned, breaking it apart, about 5-7 minutes. Drain excess fat.
Add chopped onion, bell pepper, and celery to the skillet. Sauté for about 5 minutes until vegetables are tender and onion is translucent.
Add minced garlic and cook for an additional minute, allowing the garlic to become fragrant.
Pour in rinsed rice, chicken broth, Cajun seasoning, and salt and pepper. Stir to combine and bring mixture to a boil.
Reduce heat to low, cover the skillet, and let simmer for about 20 minutes until rice absorbs liquid and is fluffy.
Remove skillet from heat and fluff rice with a fork before serving.
Notes
Rinsing the rice prevents stickiness. Adjust seasoning to taste and don't skip the vegetables for added nutrition and texture.
