Heat 1 tablespoon of olive oil in a large skillet over medium heat for about 2 minutes.
Season 6 pieces of chicken with 1 teaspoon of salt and ½ teaspoon of black pepper. Sear for approximately 10 minutes on each side until golden brown.
Transfer the cooked chicken to a plate and set aside.
In the same skillet, add 3 tablespoons of Dijon mustard and 1 cup of heavy cream. Stir for 2-3 minutes until smooth.
Return the chicken to the skillet and coat with the sauce, simmer for an additional 5 minutes.
