Ingredients

For the Stew

  • 2 lbs beef chuck cut into cubes
  • 4 large onions thinly sliced
  • 4 cloves garlic minced
  • 4 cups beef broth homemade preferred
  • 1 cup dry red wine use a wine you enjoy drinking
  • 2 tablespoon tomato paste
  • 2 teaspoon fresh thyme leaves or dried herbs
  • 2 bay leaves
  • 2 tablespoon olive oil for browning
  • to taste salt
  • to taste pepper

For the Topping

  • 1 loaf crusty bread sliced
  • 2 cups Gruyère cheese shredded
  • 1 cup mozzarella cheese shredded
  • to taste fresh parsley for garnish

Instructions

Cooking Steps

  • Season the beef with salt and pepper. In a Dutch oven, heat olive oil and brown the beef cubes for 4–5 minutes.
  • Reduce heat, add sliced onions, and cook for 20–25 minutes until caramelized. Add garlic in the last 5 minutes.
  • Stir in tomato paste and cook for an additional 2–3 minutes.
  • Deglaze the pot with wine, scraping the bottom, and let simmer for 3–5 minutes.
  • Add browned beef, beef broth, thyme, and bay leaves. Simmer covered for 1.5 to 2 hours.
  • Preheat oven to 350°F (175°C). Slice bread and arrange on a baking sheet.
  • Remove bay leaves, taste, and adjust seasoning. Ladle stew into bowls or keep in pot.
  • Place bread on top of the stew, sprinkle with Gruyère and mozzarella cheese.
  • Bake for 15–20 minutes until cheese is melted and bubbly.
  • Garnish with parsley and serve warm.

Notes

This stew can be prepared ahead of time and reheated, and it tastes even better the next day as the flavors meld.
