For the Stew

For the Topping

loaf
crusty bread
sliced

Gruyère cheese
shredded

mozzarella cheese

Instructions
Cooking Steps
Season the beef with salt and pepper. In a Dutch oven, heat olive oil and brown the beef cubes for 4–5 minutes.
Reduce heat, add sliced onions, and cook for 20–25 minutes until caramelized. Add garlic in the last 5 minutes.
Stir in tomato paste and cook for an additional 2–3 minutes.
Deglaze the pot with wine, scraping the bottom, and let simmer for 3–5 minutes.
Add browned beef, beef broth, thyme, and bay leaves. Simmer covered for 1.5 to 2 hours.
Preheat oven to 350°F (175°C). Slice bread and arrange on a baking sheet.
Remove bay leaves, taste, and adjust seasoning. Ladle stew into bowls or keep in pot.
Place bread on top of the stew, sprinkle with Gruyère and mozzarella cheese.
Bake for 15–20 minutes until cheese is melted and bubbly.
Garnish with parsley and serve warm.
Notes
This stew can be prepared ahead of time and reheated, and it tastes even better the next day as the flavors meld.
