Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
In a skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil. Add 2 sliced onions and sauté for about 20 minutes until caramelized.
Stir in 2 cloves of minced garlic, 1 teaspoon of fresh thyme, 1 teaspoon of Worcestershire sauce, and season with salt and pepper. Cook for an additional 2 minutes.
In another skillet, cook 1 pound of Italian sausage over medium heat until browned. Drain and let cool.
Combine the cooled sausage and onion mixture in a bowl, then add 1 cup of shredded Gruyère cheese and mix well.
Roll out the thawed puff pastry and cut into rectangles of about 4 inches by 6 inches.
Place a spoonful of the sausage and onion mixture on one end of the rectangle.
Fold the pastry over the filling and seal the edges with a fork.
Brush the tops of the rolls with 1 beaten egg.
Bake in the oven for 20-25 minutes until golden brown.
