Instructions

Preparation

  • Preheat your grill to a temperature between 375°F and 400°F.
  • Pound the chicken breasts to an even thickness of about 1 inch, then dry them and season both sides with salt and pepper.
  • Drizzle olive oil over the seasoned chicken and marinate for 15-20 minutes.
  • Grill the chicken for 6-7 minutes on one side, then flip and cook for an additional 6-7 minutes until the internal temperature reaches 165°F.
  • In the last minute of cooking, layer mozzarella on top of each chicken breast.
  • Remove the chicken from the grill and let it rest for 5 minutes.
  • On a serving platter, layer the sliced chicken, tomato slices, and basil leaves.
  • Drizzle balsamic vinegar over your assembled dish before serving.
