Ingredients

For the Chicken

  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • ½ tablespoon avocado oil for sautéing

For the Sauce

  • ¼ cup coconut aminos soy sauce substitute
  • 1 tablespoon honey adds sweetness
  • 1 tablespoon toasted sesame oil for nutty flavor
  • ½ teaspoon ground ginger
  • 1 tablespoon garlic cloves, minced
  • 2 tablespoons rice vinegar for tanginess
  • ¼ teaspoon black pepper
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice for acidity

For Garnishing and Sides

  • 2 cups cooked green beans for color and crunch
  • 2 cups cooked white rice acts as a base
  • 2 tablespoons sesame seeds for garnish

Directions

  • Cut the chicken into 1-inch cubes. Cook the rice and green beans according to package directions.
  • Heat avocado oil in a skillet over medium-high heat for 1 minute, then add chicken and sauté for 10-12 minutes until golden brown.
  • In a bowl, whisk together coconut aminos, honey, sesame oil, ginger, garlic, rice vinegar, black pepper, lime zest, and lime juice.
  • Remove chicken from skillet and set aside.
  • Pour the sauce into the skillet and cook for 3-5 minutes until bubbling and thickening.
  • Return the chicken to the skillet and stir to coat in the sauce, cooking for another 1-2 minutes.
  • Serve over rice with green beans, garnished with sesame seeds.

Notes

For added flavor, marinate the chicken in the sauce ingredients before cooking, and use fresh garlic and ginger for the best taste.
