Ingredients

For the Bread

  • 1 large roll Italian sub roll or two smaller hoagies

For the Cheese

  • 4 slices Provolone cheese

For the Meats

  • 4 oz Genoa salami adjust quantity to taste
  • 4 oz Deli ham
  • 4 oz Pepperoni optional

For the Salad

  • 3 cups Iceberg lettuce shredded
  • ¼ cup Red onion thinly sliced
  • 1 medium Tomato sliced
  • ¼ cup Pepperoncini drained

For the Dressing

  • ½ cup Mayonnaise
  • 2 tablespoon Red wine vinegar
  • 2 tablespoon Extra-virgin olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil optional
  • ½ teaspoon Garlic powder
  • ½ teaspoon Kosher salt to taste
  • ¼ teaspoon Black pepper freshly ground
  • ¼ teaspoon Red pepper flakes optional
  • 2 tablespoon Grated Parmesan cheese optional
  • 1 pinch Sugar optional

For Toasting

  • 1 tablespoon Unsalted butter or olive oil

Instructions

Preparation Steps

  • Prepare the vegetables by shredding the iceberg lettuce, soaking the sliced red onion, slicing the tomatoes, and draining the pepperoncini.
  • Make the dressing by whisking together mayonnaise, red wine vinegar, and olive oil, then add spices and set aside.
  • Build the grinder salad by adding shredded lettuce, red onion, and pepperoncini to the dressing.
  • Prepare the roll by toasting it with butter or olive oil until golden.
  • Add provolone cheese to the toasted roll and melt under the broiler.
  • Layer the salami, ham, and optional pepperoni on the bottom half of the roll.
  • Add seasoned tomato slices on top of the meats.
  • Top with the grinder salad mixture.
  • Close the sandwich and let it rest for 3-5 minutes.
