Step-by-Step Instructions

  • In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix thoroughly and shape into small meatballs, then set aside.
  • In a large pot, pour in chicken broth and bring to a rapid boil over medium-high heat.
  • Once the broth is boiling, gently add the meatballs and reduce heat to low. Cook for about 10 minutes, until the meatballs rise to the surface.
  • Stir in small pasta, chopped carrots, and chopped celery. Simmer for an additional 10-15 minutes until tender.
  • Add fresh spinach and parsley to the pot and stir until the spinach wilts.
  • Taste and adjust seasoning as needed before serving in bowls.

Notes
