Equipment

  • Mixing bowl
  • Whisk
  • spatula
  • Jar or airtight container

Ingredients

For the Cheese & Salami

  • 8 ounces mozzarella cheese cubed
  • 8 ounces feta cheese crumbled or cubed
  • 4 ounces salami cut into strips
  • 1 cup green olives pitted and halved

For the Marinade

  • 1 cup extra virgin olive oil
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 tablespoon red pepper flakes optional
  • 1 zest of lemon
  • 1 lemon juice

For the Garnish

  • fresh parsley chopped

Instructions

Step-by-Step Instructions

  • Start by cubing the mozzarella and feta cheese into bite-sized pieces, ensuring they are all uniform for even marination. Then, cut the salami into strips, creating a delightful combination with the cheeses. Set all these ingredients aside in a mixing bowl, ready to come together in a flavorful harmony.
  • In the same mixing bowl, combine the cubed mozzarella, feta, salami strips, and the halved green olives. Gently toss them together using your hands or a spatula until they are evenly distributed.
  • In a separate small bowl, whisk together the extra virgin olive oil, minced garlic, dried oregano, and optional red pepper flakes. Add the lemon zest and juice to the mixture, blending until well combined.
  • Pour the prepared marinade over the cheese, salami, and olive mixture. Use a spatula to gently toss everything together, ensuring every ingredient is thoroughly coated.
  • Cover the bowl with plastic wrap or transfer the mixture to a glass jar with a tight lid. Place the mixture in the refrigerator to marinate for at least 2 hours, or ideally, overnight.
  • Once marinated, take the mixture out of the refrigerator. Use a slotted spoon to carefully transfer the contents to a colorful serving platter.
  • Finish your presentation by garnishing the platter with freshly chopped parsley for a pop of color and added freshness. Serve the marinated cheese appetizer with toothpicks or alongside your favorite crackers and bread.

Notes

Store leftovers in the marinade for maximum flavor retention, but aim to eat within three days for the best taste.
