Prepare the Marinade: In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, and smoked paprika. Season with salt and pepper.
Marinate the Mushrooms: Place the mushrooms in a resealable bag or shallow dish, pour the marinade over, and refrigerate for at least 30 minutes, ideally 2 to 3 hours.
Prep the Skewers: If using wooden skewers, soak them in water for 30 minutes. Set aside metal skewers as they are ready to use.
Heat the Grill: Preheat your grill to medium-high (375°F to 400°F), oiling the grates lightly before grilling.
Assemble the Skewers: Remove the marinated mushrooms from the fridge, thread onto skewers while leaving space between each piece, and alternate with optional veggies if desired.
