  • 2 lbs chicken thighs bone-in, skinless
  • 2 tablespoon olive oil heart-healthy choice
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper optional
  • 1 teaspoon turmeric
  • 14 oz diced tomatoes undrained
  • 2 cups chicken broth
  • 1 cup cooked chickpeas
  • ½ cup dried apricots chopped
  • ¼ cup green olives sliced
  • to taste salt
  • to taste black pepper

For Serving

  • ¼ cup fresh cilantro or parsley chopped
  • as needed couscous or rice for serving

Instructions

Step‑by‑Step Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  • Stir in minced garlic, ground cumin, ground coriander, turmeric, ground ginger, ground cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  • Increase heat to medium-high and add chicken thighs, seasoning with salt and pepper. Sear for about 4-5 minutes per side until browned.
  • Pour in diced tomatoes, chicken broth, chickpeas, and dried apricots. Stir to combine and bring to a boil.
  • Reduce heat to low, cover and simmer for about 30-40 minutes, until chicken is cooked through and tender.
  • Add sliced green olives, stir to incorporate, and adjust seasoning with salt and pepper if needed.
  • Serve over couscous or rice, garnished with fresh cilantro or parsley.

Notes

For best results, ensure chicken is patted dry before browning. Allow flavors to fully meld during simmering and adjust seasoning before serving.
