For the Chicken

  • 4 large chicken breasts Choose breasts that are uniform in size for even cooking.

  • 2 cups baby spinach Adds color and nutrition; you can also use kale or Swiss chard.
  • 0.5 cup cheese e.g., mozzarella or parmesan; ties the filling together.

For Cooking

  • 2 tablespoons butter Use unsalted butter for the best control over seasoning.
  • 1 tablespoon oil A neutral oil is ideal for searing the chicken breasts before baking.

  • Preheat your oven to 200°C (390°F) or 180°C for fan-forced.
  • Carefully slice a pocket into each chicken breast, about 3-4 inches wide, and season both the inside and outside with half of the salt and pepper.
  • Melt 2 tablespoons of butter in a heavy-based skillet over high heat, add chopped mushrooms and sauté for about 3 minutes until golden brown.
  • Stir in minced garlic, fresh thyme, and remaining salt and pepper, cooking for another 2 minutes.
  • Stir in 2 cups of baby spinach into the mixture, cooking until wilted (about 30 seconds).
  • Spoon the mixture into the pockets of each chicken breast, topping with cheese and sealing with toothpicks.
  • Sear each stuffed chicken breast in a skillet with 1 tablespoon of oil over medium-high heat for about 1.5 minutes per side.
  • Transfer the skillet with the chicken breasts into the preheated oven and bake for approximately 15 minutes, or until the internal temperature reaches 65°C (149°F).
  • Remove from the oven and let the chicken rest for 5-7 minutes before serving.

Notes

Choosing fresh ingredients significantly enhances the flavor. Don’t overstuff the chicken pockets to prevent spills during cooking. Allow resting time for juicy meat.
