Rinse 2 cups of sushi rice under cold water until the water runs clear, then combine with 2.5 cups of water in a pot. Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
In a small bowl, whisk together 0.25 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt until dissolved. Fold this mixture into the cooked sushi rice and allow it to cool slightly.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Wet your hands and press the seasoned sushi rice into small bite-sized portions on the baking sheet.
