In a blender or food processor, combine 1 cup of fresh pineapple chunks, ⅓ cup soy sauce, ¼ cup honey, 2 tablespoons olive oil, 2 tablespoons grated fresh ginger, 2 minced garlic cloves, 1 tablespoon rice vinegar, and ½ teaspoon black pepper. Blend these ingredients until smooth, creating a luscious glaze that’s full of flavor. Set aside half of this pineapple glaze for later basting.
Set your grill or grill pan to medium-high heat, allowing it to warm up for about 10 minutes. To prevent sticking, lightly brush the grates with olive oil.
Place 4 salmon fillets skin-side up in a shallow dish and pour half of the prepared pineapple glaze over them. Allow the salmon to marinate for 15 to 20 minutes.
