  • Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet. Roast for 20 minutes.
  • After 20 minutes, sprinkle grated Parmesan cheese over the cauliflower. Return to oven and roast for an additional 10 minutes.
  • Once done, transfer the roasted cauliflower to a serving platter and drizzle with basil pesto.
  • Finish with lemon zest, toasted pine nuts, and chopped fresh parsley. Serve immediately.
