Ingredients

For the Chicken

  • 2 pieces Boneless, skinless chicken breast
  • 2 tablespoons Sesame oil Adds rich flavor
  • 2 tablespoons Soy sauce Low-sodium recommended
  • 1 tablespoon Honey For sweetness

For the Salad

  • 1 can Chickpeas Drained and rinsed
  • 1 cup Cherry tomatoes Halved
  • 4 cups Mixed salad greens
  • 1 cup Cucumber Thinly sliced
  • ½ medium Red onion Thinly sliced

For the Dressing

  • 2 tablespoons Toasted sesame seeds
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Rice vinegar Can substitute apple cider vinegar
  • 1 teaspoon Ginger Grated
  • 1 clove Garlic Minced

Instructions

Preparation

  • Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  • In a small bowl, whisk together the sesame oil, soy sauce, honey, salt, and pepper.
  • Brush the chicken breasts with the marinade and let them marinate for at least 10 minutes.
  • Grill the chicken for about 6-7 minutes on each side until fully cooked.
  • Let the chicken rest for 5 minutes before slicing it into strips.
  • In a large salad bowl, combine the chickpeas, cherry tomatoes, salad greens, cucumber, and red onion.
  • For the dressing, whisk together the olive oil, rice vinegar, ginger, garlic, and a pinch of salt.
  • Pour the dressing over the salad and toss to combine.
  • Top the salad with the sliced grilled chicken and sprinkle with toasted sesame seeds.
  • Serve immediately for the best flavor.

Notes
