  • 1 bunch asparagus trimmed and cut into 2-inch pieces

  • 1 medium red bell pepper sliced
  • 1 cup snap peas trimmed

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 tablespoon cornstarch
  • 1 tablespoon water

  • Rinse the shrimp under cold water, then pat them dry. Season lightly with salt and pepper.
  • Wash and trim the asparagus, cutting it into 2-inch pieces. Thinly slice the red bell pepper and rinse the snap peas. Mince the garlic and ginger.
  • In a small bowl, combine soy sauce, oyster sauce, cornstarch, and water. Whisk until cornstarch is dissolved.
  • Heat a skillet or wok over medium-high heat and add vegetable oil. Heat for about 1 minute.
  • Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  • Carefully add shrimp in a single layer. Cook undisturbed for 2-3 minutes until pink and opaque. Flip to cook for another 1-2 minutes, then remove from pan.
  • In the same pan, add asparagus and bell pepper. Stir-fry for 2-3 minutes until they start to soften.
  • Add snap peas and stir-fry for another 2 minutes, keeping the vegetables moving.
  • Return cooked shrimp to the pan and pour the sauce over. Stir to coat everything evenly.
  • Cook for an additional 1-2 minutes until the sauce thickens. Adjust seasoning with salt and pepper.
  • Serve the stir fry over rice or noodles, garnished with sesame seeds and green onions.
