Ingredients

For the Base

  • 4 cups Sweet Potato peeled and cubed
  • 2 tablespoon Olive Oil or any neutral oil

For Seasoning

  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
  • 1 teaspoon Paprika or Oregano
  • 1 teaspoon Garlic Powder or fresh garlic

For the Protein

  • 1 lb Ground Meat Beef or Turkey
  • 1 medium Yellow Onion diced

For the Fresh Crunch

  • 1 cup Tomato chopped
  • 1 cup Cucumber chopped
  • 1 medium Jalapeño sliced
  • 2 cups Romaine Lettuce shredded

For Toppings

  • 1 cup Cheddar Cheese shredded
  • Guacamole optional
  • Sour Cream optional

Instructions

Preparation Steps

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread on the baking sheet.
  • Roast the sweet potatoes for 30-40 minutes until fork-tender and slightly crispy.
  • In a skillet over medium heat, cook the ground meat until browned, about 10 minutes, stirring occasionally.
  • Add diced onion to the meat and cook for an additional 5 minutes until softened.
  • Chop the tomato, cucumber, and jalapeño, seasoning lightly with salt.
  • Assemble the bowl by layering roasted sweet potatoes, ground meat, chopped veggies, cheese, and optional toppings.
  • Serve warm, or store components separately for meal prep.
