Ingredients

For the Meatballs

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Sauce

  • 2 tablespoon olive oil for frying
  • 1 cup canned pumpkin puree
  • 1.5 cups chicken broth
  • ½ cup heavy cream
  • 2 tablespoon butter
  • 1 small onion finely chopped
  • 2 cloves minced garlic additional
  • 2 tablespoon fresh sage chopped
  • ½ teaspoon nutmeg

Instructions

Meatball Preparation

  • In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, egg, minced garlic, oregano, salt, and black pepper. Mix thoroughly.
  • Roll the mixture into small meatballs, about 1-inch in diameter. You should have around 20 meatballs.
  • Heat olive oil in a skillet over medium heat and brown the meatballs for 5-7 minutes on each side.

Sauce Preparation

  • In the same skillet, melt the butter and sauté the onion until soft.
  • Add minced garlic and continue to sauté until fragrant.
  • Stir in pumpkin puree, chicken broth, and heavy cream, bringing the mixture to a gentle simmer.
  • Add sage, nutmeg, and season with salt and pepper to taste, letting it simmer for 1-2 minutes.
  • Return the meatballs to the skillet, cover, and let them simmer in the sauce for 10-15 minutes.
  • Serve hot, spooning the pumpkin sage sauce over the turkey meatballs.
