Ingredients

For the Sausage

  • 1 pound Italian sausage sweet or spicy

For the Veggies

  • 2 cups Bell peppers sliced into strips
  • 1 medium Red onion chopped
  • 2 cups Broccoli florets bite-sized pieces
  • 1 medium Zucchini sliced
  • 1 cup Baby potatoes halved

For Seasoning

  • 3 tablespoons Olive oil for drizzling
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper

For Garnish

  • 2 tablespoons Fresh parsley optional, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Wash and chop all the vegetables into bite-sized pieces.
  • Cut the Italian sausage into bite-sized pieces and add them to the bowl of chopped vegetables.
  • Drizzle olive oil over the sausage and vegetables, then sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss everything well.
  • Spread the mixture in a single layer on a large sheet pan.
  • Bake for 30-35 minutes, stirring halfway through until sausage is cooked through and the vegetables are tender.
  • Remove from oven and sprinkle fresh parsley over the top before serving.
