  • Heat a large skillet over medium heat, and add ground beef along with salt, pepper, chili powder, and cumin. Cook for about 5-7 minutes, stirring frequently, until browned. Remove beef and set aside.
  • In the same skillet, add diced onion, green, and red bell peppers. Sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  • Return cooked ground beef to the skillet with sautéed vegetables. Stir in corn tortilla strips, then pour in enchilada sauce and mix thoroughly.
  • Sprinkle cheddar cheese and Monterey Jack cheese over the mixture. Cover and cook on low heat for 5-7 minutes or until cheese is melted.
  • Remove from heat, garnish with fresh cilantro, and serve hot.
