  • 680 g red potatoes cut into bite size chunks (about 4 medium potatoes)
  • 720 ml unsalted chicken broth warmed, plus up to 240 ml more to thin as desired
  • 15 g beef base
  • 15 ml Worcestershire sauce
  • 15 g minced fresh rosemary or 1 teaspoon dried
  • 10 g minced fresh thyme or ¾ teaspoon dried
  • 680 g lean ground beef
  • 15 ml olive oil for browning the beef
  • 1 Salt and black pepper season to taste
  • 180 g chopped yellow onion (1 medium)
  • 150 g chopped celery (2 ribs)
  • 340 g carrots cut into chunks (about 4 medium)
  • 15 g minced garlic (3 cloves)
  • 30 g tomato paste
  • 12 g tapioca starch mixed with 60 ml unsalted chicken broth
  • 45 g chopped fresh parsley

Instructions

Preparation

  • Add potatoes to slow cooker.
  • Stir together chicken broth with beef base and dissolve it, adding Worcestershire, rosemary, and thyme.

Cooking

  • Heat oil and brown beef in a skillet.
  • Transfer beef to slow cooker.
  • Sauté onions and celery, then add carrots.
  • Cook garlic and stir in tomato paste.

Final Assembly

  • Pour sautéed mixture into slow cooker.
  • Cover and cook until veggies are tender.

Thickening

  • Whisk together broth and tapioca starch, and add to slow cooker.

Final Touch

  • Stir in parsley and thin with broth as desired.
